Darbys is an oyster bar, bakery and grill in the heart of Embassy Gardens, brought to you by the talented Robin Gill. Gill wanted to create an old school institution, a timeless establishment and an ode to his father, a famous jazz musician and trumpeter who toured the US in the 60’s. Darby lived life to the bucket full, appreciated all the finer things in life but none of the gimmicks. We replicate this in the food that we serve, good quality products, friendly service and an air of humble sophistication that welcomes everyone, at any time of day.

The Ercilla De Bilbao was the place to be and be seen in the 70’s. Their guests included Pavarotti, Maradona, the iconic matadors and noteworthy politicians of that era. It was the second hotel to grace the city of Bilbao and a symbol of the cherished relationship between our British coast and the Basque region.

Mount Juliet Estate is a 270-year-old Irish Estate built for one Juliet Butler, as a gift from her husband to represent his undying love for her.
